Semi hard cheese cut into wedges tastes flatter than the same cheese shaved thin, because a ruffled shaving puts far more of its surface against the air. That is the whole job of a curler: you spike half a wheel on the center pin, sit it flat side down on the wooden base, and sweep the blade across the top.

Good to know
This wants half a wheel, flat face down. A wedge cut at a deli counter will not sit level on the pin, so buy the cheese and the curler in the same trip rather than the other way round. Texture is the other limit: anything that gives under a thumb tears instead of curling, so a ripe brie is out and a Tete de Moine is exactly right.
Care
Wipe the blade and dry it straight away, then stand the base on edge until it is dry through. The wood is the part that objects to a dishwasher, and a warped base leaves a blade that no longer sits flat against the cheese.
