Three boards beat one big board for a plain reason: raw chicken and the bread knife never share a surface, and the small one is washed and back on the rack before the big one is even wet. These are bamboo strips glued up in a checkerboard, pre oiled and ready to cut on.

Care

Wash by hand in warm water, then stand the board on edge to dry, which is what the rack is for. Left flat on a counter, one face stays wet and the board cups. A dishwasher does worse: the heat and the long soak work on the glue lines between the strips until they open.

When the surface looks pale and dry, run food grade mineral oil over it with the applicator, leave it overnight, wipe off whatever has not soaked in. Once a month is plenty for a board in regular use.

Good to know

Bamboo is harder than maple and that cuts both ways. The surface resists scarring, and your knife pays for it. If you hone once a month now, plan on doing it more often.

Spare silicone pads come in the set, which tells you which part goes missing first.
