Smoke on a drink is a short window rather than a flavor that keeps: it sits on the surface, works into the top of the glass, and thins out within a few minutes of lifting the lid. This is the wooden top that makes it happen, resting on the rim of a rocks glass with a well in the plate for the chips.

How it works

Pour the drink, set the smoker on the glass, spoon chips into the well, and hold a butane torch on them until they catch and smoke. A lighter will not stay lit long enough to take wood past smoldering. Give it thirty seconds under the dome, lift it off, and serve.

Care

Let it cool before you pick it up, since the plate takes the flame directly and stays hot longer than the wood around it looks like it should. Brush the ash out of the well between drinks and keep the whole thing away from the sink: soaking turned wood is how it cracks.

Good to know

The smoke that misses the glass goes into the room, so this belongs near a hood or an open window rather than in the middle of a small kitchen. Apple and cherry are the mild end and oak and walnut are the heavy end, which matters more than people expect on a light cocktail.
