Cutting is what keeps the leaf green and the smell in the room. This is a manual herb mill: load the leaves, twist the top, and stainless steel blades cross-cut them straight onto the plate.

Good to know

It cuts leaves, so strip rosemary and thyme off their woody stalks before they go in or the stalks jam the blades. Load it loosely as well. Packed hard with wet basil it grinds toward paste, which is the one outcome a mill exists to avoid.

Care

Rinse it the moment you are done. Herb oil dries onto steel within the hour, then takes a brush and hot water to shift, and until it does the last thing you minced turns up in the next thing you mince.
